Super suppers for less than £1



Courgette Pancakes, or as the lovely Ina Garten calls them 'Zucchini Pancakes'

These delicious little pancakes are quick and easy to make and easy to modify to your own taste!


For just 70p you can make 6 reasonably sized (4cm ish) pancakes, enough to feed two people and have a robust dinner - it just needs a little side salad to jazz it up; a handful of Asda's mixed salad at 55p a bag, makes it a seriously healthy. cheap eat.
If you're feeling ostentatious and fancy a nice poached egg on top of your pancakes, add 12p per egg to your budget and it brings the whole meal for two people less than £1

Method

Grate your courgette and red onion into a bowl.
In another bowl, mix your egg, flour and baking powder.
Add your grated mix into your eggy mix and stir together.
In a frying pan, heat 1 teaspoon of vegetable oil.
When hot, spoon in your mix, as big or as small as you like your pancakes.
Cook until golden, then flip, ensuring each side is lovely and browned.

Serve with your side salad


Swedish Jansson - better known as Jansson's temptation




1 tin of new potatoes (£0.15)
1 tin of anchovies (£0.70)
100 ml of milk (£0.15)
50 ml of hot water
50 ml of crème fraiche (£0.15)
1 white onion (£0.06)
2-3 stalks of parsley (homegrown, taken from herb box)
£1.21

Serves 4 (or two with lunch box leftovers for work the next day)


Slice your onion nice and thin, sauté in a little butter until soft.
Season with salt and pepper.
Add potatoes.
Chop up anchovies and add to pan, mixing together potatoes, onions and anchovies.
Pour over 100ml of milk and 50 ml of hot water.
Simmer for 30 minutes on a low heat.
Take off the heat, add crème fraiche and serve topped with chopped parsley.



Soda Bread




300g plain flour (£0.08)
150g plain yoghurt (£0.12)
50g milk (£0.08)
1 tsp of bicarbonate of soda (£0.04)
1 tsp of salt (£0.01)
Water to loosen if needed

Place your flour in a bowl, add your salt and bicarbonate of soda.
Mix in your wet ingredients and bring the dough together.
Once it sticks together freely, lay it on your table, knead softly and bring into a ball, place on your baking tray, slice a cross into the surface and bake in a hot oven 200c for 40-45 minutes
